Muffin Batter Ingredients
- 180g Sour Cream, at room temperature
- 230g Unsalted Butter, softened
- 180g Granulated Sugar
- 2 Large Eggs, at room temperature
- 1/2 tsp Baking Soda
- 1 tsp Vanilla Extract
- 460g All-Purpose Flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 80g Yuzu Marmalade (fruit pulp only)
- 230g Korean Frozen Blueberries
Cooking Instructions
Step 1
Begin by creaming the softened butter in a large bowl until smooth. Add the granulated sugar gradually and beat until the mixture is light and fluffy. Next, add the room temperature eggs one at a time, beating well after each addition to ensure they are fully incorporated and the mixture doesn’t curdle. Incorporate the vanilla extract.
Step 2
Once the butter and egg mixture is well combined, gently stir in the room temperature sour cream until just incorporated. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients in two additions, mixing on low speed or with a spatula until just combined. Be careful not to overmix, as this can lead to tough muffins.
Step 3
Gently fold in the yuzu marmalade pulp and frozen blueberries until evenly distributed throughout the batter. If using frozen blueberries, you can lightly toss them in a tablespoon of flour before adding to help prevent them from sinking. Fill your muffin cups about two-thirds full with the batter. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Step 4
These Sour Cream Blueberry Yuzu Muffins are wonderfully aromatic and extra tangy thanks to the addition of yuzu marmalade. What a delightful, albeit lengthy, name for such a special treat!
Step 5
You’ll notice plump blueberries dotted throughout these delicious-looking muffins, promising a burst of flavor in every bite.
Step 6
Each bite offers a delightful combination of juicy blueberries and the bright, citrusy notes of yuzu, enhanced by the moistness of the sour cream. The addition of yuzu marmalade truly elevates the tanginess compared to previous versions, creating a flavor profile that fans of bright, fruity desserts will adore. They pair wonderfully with a cold, fizzy drink or a glass of milk. For an even richer flavor, allow the muffins to cool completely, then store them in an airtight container for a day or two to let the flavors meld and mature.
