Main Ingredients
  • 1 semi-dried squid
  • 1 Cheongyang pepper (Korean chili)

Seasoning
  • 1 Tbsp soy sauce (jin-ganjang)
  • 1 Tbsp soup soy sauce (guk-ganjang)
  • 1 Tbsp corn syrup (mulyeot)
  • 3 Tbsp water
  • 1 Tbsp cooking wine (mirin)
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, rinse the semi-dried squid and cut it into bite-sized pieces, about 2-3 cm. Wash the Cheongyang pepper, remove the stem, and slice it diagonally. Prepare the minced garlic.

Step 2

Heat a pan over medium heat and add 1-2 tablespoons of cooking oil. Ensure the oil coats the entire surface of the pan.

Step 3

Once the pan is hot, add the cut squid and stir-fry over medium heat.

Step 4

As the squid begins to cook, add the minced garlic and continue to stir-fry until the squid is about 70% cooked, allowing the garlic flavor to infuse into the squid.

Step 5

When the squid is partially cooked, reduce the heat to low. Add 1 Tbsp soy sauce, 1 Tbsp soup soy sauce, 1 Tbsp corn syrup, 3 Tbsp water, and 1 Tbsp cooking wine. Mix well to ensure the sauce coats the squid evenly. (Tip: Soy sauce brands vary in saltiness, so taste and adjust the amount to your preference.)

Step 6

Once the sauce is combined with the squid, add the sliced Cheongyang pepper. Increase the heat to high and quickly stir-fry for about 1-2 minutes until the sauce thickens slightly and becomes glossy. Be careful not to burn the sauce. Turn off the heat immediately.

Step 7

Finally, sprinkle some sesame seeds over the finished soy-braised dried squid. Your delicious side dish is ready to be enjoyed with a warm bowl of rice!
