Step 1

Begin by preparing your vegetables to add depth of flavor. Thinly julienne the carrot or finely chop it for a more delicate texture. Chop the green onions finely to impart their fresh aroma, and trim the base of the enoki mushrooms, then separate the strands. Having your vegetables prepped will make the cooking process much smoother.

Step 2

Heat a pot over medium heat and add a splash of cooking oil. Add the prepared carrots and sauté for 1-2 minutes. Stir-frying the carrots slightly in oil enhances their natural sweetness and improves their texture. Cook until they become slightly translucent.

Step 3

Now, let’s build the broth base. Pour 100ml of water and 200ml of milk into the pot with the sautéed carrots. The milk will create a wonderfully smooth and rich broth. Add the vegetable flakes from the ramen soup base and bring to a boil over high heat. Once boiling, reduce the heat to medium-low.

Step 4

As the broth begins to simmer, add the ramen noodles and the Jjamppong ramen soup powder. Using Jjamppong powder offers a spicy kick that beautifully complements the creaminess of the milk, creating a truly unique taste. Feel free to substitute with your favorite ramen soup powder. Gently loosen the noodles with chopsticks to prevent them from clumping together.

Step 5

Once the noodles are partially cooked, add the enoki mushrooms and chopped green onions. Continue to cook for another 1-2 minutes. Enoki mushrooms cook quickly and can become mushy if overcooked, so adding them towards the end preserves their pleasant texture. Check if the noodles are cooked to your desired doneness, then turn off the heat. Be careful not to overcook, as the noodles can become too soft.
