  • 1 tsp Cooking Oil
  • 1/2 Onion
  • 1 Korean Chili Pepper (Cheongyang Pepper)
  • 3 Stalks Green Onion

Seasoning Sauce
  • 1.5 Tbsp Soy Sauce
  • 2 Tbsp Rice Wine (Cheongju)
  • 1 Tbsp Gochujang (Korean Chili Paste)
  • 2 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Sugar
  • 1.5 Tbsp Plum Syrup (Maesilcheong)
  • 1 Tbsp Honey
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Minced Green Onion
  • 1 Tbsp Ginger Juice
  • 1 tsp Sesame Oil
  • Pinch of Black Pepper
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

To remove any gamey odor from the pork rind when boiling, prepare a pot of water and add ingredients known for their odor-eliminating properties, such as doenjang (soybean paste), coffee grounds, or bay leaves, and bring it to a rolling boil.

Step 2

Once the water is boiling vigorously, add the pork rind and boil for about 5 minutes, or until it becomes translucent and tender. After boiling, drain the pork rind in a colander and quickly rinse it under cold running water to remove excess moisture. This step is crucial for achieving a perfectly chewy texture.

Step 3

In a bowl, combine all the seasoning sauce ingredients except for the sesame oil and toasted sesame seeds. Mix them well to create a delicious sauce. Preparing the sauce in advance will save you time during cooking.

Step 4

Examine the boiled and drained pork rind, and trim off any excess fatty pieces. Then, cut the pork rind into bite-sized pieces, about 2-3 cm. This ensures that the sauce penetrates evenly during cooking, making it more flavorful.

Step 5

Add the prepared seasoning sauce to the cut pork rind and mix thoroughly with your hands. For a deeper flavor, let it marinate in the refrigerator for 30 to 40 minutes before stir-frying.

Step 6

Place the marinated pork rind into a pan over medium heat and begin to stir-fry. Stir occasionally to prevent sticking. The natural oils from the pork rind will help in the cooking process.

Step 7

Once the pork rind is partially cooked, add the sliced onion and Korean chili pepper, and continue to stir-fry. When the vegetables soften, add the chopped green onions and stir-fry briefly. Finally, drizzle with sesame oil and sprinkle with toasted sesame seeds to finish. This dish pairs wonderfully with a side of kimchi!
