Essential Ingredients
- 1 bag soybean sprouts (approx. 300g)
- 1-2 links sausage (or Vienna sausages, adjust to taste)
- 1/4 onion
- 1/2 green onion stalk
Cooking Instructions
Step 1
First, prepare the soybean sprouts. Rinse them gently 2-3 times under running water. Then, place them in a colander to drain thoroughly. This step helps to remove any earthy smell and ensures a crisp texture.
Step 2
Next, prepare the supporting ingredients. Slice 1-2 links of sausage into bite-sized pieces, about 1cm thick. If using Vienna sausages, you can cut them in half. Thinly slice 1/4 onion. Finely chop 1/2 green onion stalk to add its fragrance.
Step 3
Now, let’s make the delicious sauce, the heart of this dish! In a bowl, combine 2 Tbsp gochujang, 2 Tbsp gochugaru, 4 Tbsp soy sauce, 1 Tbsp minced garlic, and 1 Tbsp sugar. Stir well with a spoon until all ingredients are evenly mixed. This creates a perfect balance of sweet and spicy flavors.
Step 4
It’s time to start cooking. Lightly heat a pan over medium-low heat and add a little cooking oil. Add the sliced sausage and stir-fry until lightly browned. Sautéing the sausage first enhances its flavor and renders out some of the fat, making it even more delicious.
Step 5
Once the sausage is slightly cooked, add the sliced onion to the pan. Then, add the chopped green onion. Pour in 1 cup (200ml) of water for moisture. Stir gently to combine the ingredients.
Step 6
Now, add the main ingredient: the soybean sprouts generously on top. Drizzle the prepared sauce evenly over the sprouts. Once the sauce is added, cover the pan immediately with a lid. Cook over medium heat for about 3-4 minutes. Avoid high heat to keep the sprouts crunchy while allowing the flavors to meld.
Step 7
After 3-4 minutes, lift the lid and gently mix the ingredients in the pan. Continue to cook uncovered for another 1-2 minutes until done. Be careful not to overcook the soybean sprouts, as they can become mushy. This final step ensures they remain crisp! Your spicy and crunchy Soybean Sprout and Sausage Casserole is ready. Don’t forget to mix the remaining sauce with rice for an absolutely delightful finish!
