Main Ingredients
  • 1 can (150g) canned tuna
  • 1/2 medium onion
  • 2 green chili peppers
  • 1 Korean red chili pepper (optional, for adjust spiciness)
  • 1/4 medium carrot
  • 1/2 medium potato
  • 3 Tbsp canned corn (sweet corn)

Sauce
  • 1 tsp ginger sauce (or a pinch of minced ginger)
  • 1 Tbsp cooking wine (mirin)
  • 2/3 Tbsp soy sauce
  • 1 tsp sesame oil
  • 1 Tbsp corn syrup (or rice syrup)
  • 1/2 tsp minced garlic
  • 1 Tbsp ketchup
  • 2 Tbsp gochujang (Korean chili paste)

Cooking Instructions

Step 1

First, drain the oil thoroughly from the canned tuna (150g) using a sieve. This step ensures a cleaner, more savory flavor. Wash all the vegetables, then dice them finely or chop them and have them ready. Drain the water from the canned corn as well.

Step 2

In a bowl, combine all the sauce ingredients and mix them well. If you don’t have ginger sauce, you can use a tiny bit of minced ginger or omit it. Preparing the sauce in advance makes the cooking process much smoother.

Step 3

Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the diced potatoes and carrots first and stir-fry until they become slightly tender and translucent. These vegetables take a bit longer to cook, so it’s best to sauté them first.

Step 4

Once the potatoes start to look transparent, add the chopped onion, green chili peppers, and Korean red chili pepper. Stir-fry quickly over high heat. It’s important to maintain the crispness of the vegetables, so avoid overcooking them.

Step 5

Add the canned corn and stir-fry briefly with the other ingredients. Corn can become mushy if overcooked, so just toss them together lightly.

Step 6

After about 20 seconds, pour in the prepared sauce and stir-fry, coating all the ingredients. Reduce the heat to medium to prevent the sauce from burning. Continue stir-frying for 1-2 minutes until the sauce thickens and coats everything evenly.

Step 7

Now, add the drained canned tuna to the pan. Gently mix and stir-fry until the sauce is well combined with the tuna and vegetables. Avoid overcooking the tuna once it’s added; just coat it with the sauce.

Step 8

Finally, sprinkle with sesame seeds for an extra nutty flavor, if desired. You can skip this step, but it adds a nice visual appeal and taste.

Step 9

Your hearty and delicious chili vegetable tuna stir-fry is ready! It’s wonderful served over a bowl of hot rice or enjoyed with fresh lettuce wraps.
