Ribs Ingredients
- Pork back ribs 400g
- 1 Onion
- 3 Whole garlic cloves
- 8 Whole peppercorns
- 4 Bay leaves
- 5 Tteokbokki rice cakes (optional)
Spicy & Sweet Sauce
- 2 tsp Gochugaru (Korean chili powder)
- 1 Tbsp Soy sauce
- 2 tsp Sugar
- 1 tsp Minced garlic
- 2 tsp Gochugaru (Korean chili powder)
- 1 Tbsp Soy sauce

Cooking Instructions
Step 1
To remove any gamey odor from the pork ribs, place them in a pot with plenty of water, whole peppercorns, whole garlic cloves, and bay leaves. Simmer over medium heat for about 15 minutes. This step is crucial for a clean flavor.
Step 2
After 15 minutes of simmering, carefully strain out and discard the whole peppercorns, whole garlic cloves, and bay leaves. You only need the flavored water at this point.
Step 3
Gently rinse the blanched pork ribs under cool running water to remove any remaining impurities. Place the cleaned ribs back into the pot, ready for the next step.
Step 4
Add enough fresh water to cover the ribs. Now, add the sauce ingredients: 1 tsp minced garlic, 2 tsp gochugaru, 1 Tbsp soy sauce, 2 tsp sugar, and 1 roughly chopped onion. Bring to a boil, then reduce the heat to medium-low and let it simmer.
Step 5
Partway through the cooking process, add the tteokbokki rice cakes. Continue to simmer over medium-low heat for about 20 minutes, or until the sauce has thickened and coated the ribs beautifully. The rice cakes will become tender and absorb the delicious flavors.
