Main Ingredients
- 4 white parts of scallions
- 8 slices of thinly sliced pork belly (daepae samgyeopsal)
Spicy & Sweet Gochujang Sauce
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (Korean soy sauce)
- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Oligodang (corn syrup or rice syrup)
- 1/2 Tbsp Toasted sesame seeds
For Cooking
- 2 Tbsp Cooking oil
- Pinch of salt
- Pinch of black pepper
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (Korean soy sauce)
- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Oligodang (corn syrup or rice syrup)
- 1/2 Tbsp Toasted sesame seeds
For Cooking
- 2 Tbsp Cooking oil
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare the white parts of the scallions, the stars of this recipe. Wash them thoroughly, then cut them in half lengthwise to create 8 pieces. This will make rolling the pork belly easier.
Step 2
To make rolling easier, take the thinly sliced pork belly out of the freezer and let it sit at room temperature to thaw slightly. About 8-9 slices are appropriate. Be careful not to thaw it too much, as it might fall apart.
Step 3
Let’s make a delicious sauce! In a bowl, combine 2 Tbsp Gochujang, 1 Tbsp Jin Ganjang, 2 Tbsp Mirin, and 2 Tbsp Oligodang. Whisk with a whisk or spoon until well combined to create the sauce. This is the golden ratio of sweet and spicy!
Step 4
Now, it’s time to start rolling. Place a slice of pork belly over one piece of prepared scallion and roll it up tightly, just like you would roll sushi. The key is to roll it firmly so the pork belly doesn’t unravel.

Lightly sprinkle salt and black pepper on the outside of the rolled pork belly and scallion rolls to season them. This step will further enhance the flavor of the pork belly.

Heat 2 Tbsp of cooking oil in a frying pan over medium heat. Place the pork belly rolls in the pan and cook, turning them occasionally, for about 8 minutes until they are nicely browned and cooked through. Aim for a crispy exterior and a tender interior.

Once the scallions are tender and the pork belly is golden brown, reduce the heat to low. Pour the prepared spicy and sweet gochujang sauce evenly over the rolls. Continue to cook, stirring gently to prevent burning, for about 2 minutes until the sauce thickens and coats the ingredients beautifully. This step allows the sauce to permeate the rolls.
Step 8
When the gochujang sauce has reduced to a glaze and is deliciously coating the pork belly and scallions, turn off the heat. The aroma alone is mouthwatering!
Step 9
Arrange the finished pork belly and scallion rolls on a nice serving plate. Finally, sprinkle 1/2 Tbsp of toasted sesame seeds over the top.
