- 3 fresh shiitake mushrooms (caps only, stems removed)
- 1/2 cucumber
- 20g beef (e.g., tenderloin or sirloin, thinly sliced)
- 1 fresh egg
- 1/2 red chili pepper (for color)
- 1/2 green chili pepper (for aroma)
- 1 section of green onion (white part)
- 1 clove garlic
- 10g ginger (optional, for enhanced flavor)

Cooking Instructions
Step 1
Bring a pot of water to a boil and blanch the shiitake mushrooms for about 1 minute. This helps remove any earthy smell and makes them more tender. Drain the blanched mushrooms, rinse under cold water, pat dry, and slice them into bite-sized pieces.
Step 2
Finely mince the white part of the green onion, garlic, and ginger. Wash the cucumber and slice it thinly, about 0.3cm thick. Slicing them thinly will ensure they remain crisp when stir-fried.
Step 3
Remove the stems from the red and green chili peppers and slice them diagonally about 0.3cm thick. These add a beautiful color to the dish and a subtle fragrance.
Step 4
Drain any excess liquid from the thinly sliced beef. In a bowl, combine the beef with 1/2 tsp soy sauce, 1/2 tsp sugar, a pinch of sesame oil, a pinch of black pepper, a pinch of sesame seeds, and the minced green onion, garlic, and ginger. Gently mix everything together to marinate. This step ensures the beef becomes more tender and flavorful.
Step 5
Separate the egg yolk and white. Beat each separately, removing the chalazae. Lightly oil a pan and cook the egg in thin layers over low heat until golden brown on both sides. Once cooked, let the egg crepes cool and then slice them thinly into strips.

Heat 1 tablespoon of cooking oil in a pan over medium-high heat. Add the marinated beef and stir-fry until it’s almost cooked through. Then, add the sliced cucumber and shiitake mushrooms, and continue to stir-fry quickly. Cook just until the cucumber starts to turn translucent, then proceed to the next step. Be careful not to overcook, or the cucumber will become mushy.
Step 7
Finally, drizzle in a little sesame oil and sprinkle with sesame seeds, tossing to combine well. Garnish the stir-fry with the thinly sliced egg crepes and red chili peppers.
