- 1.5 Tbsp Fish sauce (Eogan-jang)
- 2 Tbsp Perilla seed powder (Deulkkae-garu)
- 1 Tbsp Korean soy sauce (Jip-ganjang)
- 1 Tbsp Perilla oil (Deulkireum)
- Minced green onion, to taste
- Minced garlic, to taste
Cooking Instructions
Step 1
Begin by carefully peeling the tough outer skin from the sweet potato stems. Then, split them lengthwise and remove the fibrous inner core. This preparation ensures a much more tender and pleasant texture.
Step 2
In a large pot, bring plenty of water to a rolling boil and add 1 tablespoon of salt. Once boiling, add the prepared sweet potato stems and blanch for about 7 to 8 minutes. Be careful not to overcook them, as they can become mushy. Immediately drain the stems and rinse them under cold running water to stop the cooking process and cool them down. Squeeze out any excess water thoroughly before proceeding.
Step 3
Heat a pan over medium-low heat. Add the thinly sliced onion, 1 tablespoon of perilla oil for a nutty aroma, 1.5 tablespoons of fish sauce for umami, and 1 tablespoon of Korean soy sauce. Stir-fry until the onions become slightly translucent and fragrant.
Step 4
As the onions begin to soften and meld with the seasonings, add a pinch of minced garlic and some chopped green onion. Continue to stir-fry for another minute until their aromas are released. Keep an eye on the heat to prevent the garlic from burning.
Step 5
Now, it’s time to add the star ingredient for that signature nutty flavor: 2 tablespoons of perilla seed powder. Sprinkle it over the stems and onions and gently toss to combine. You’ll start to smell the rich, toasty aroma of the perilla seeds.
Step 6
Continue to stir-fry for another 2 to 3 minutes, allowing the flavors to meld and the sauce to coat the stems lightly. Once everything is well combined and the dish looks moist and flavorful, your delicious Stir-Fried Sweet Potato Stems with Perilla Powder are ready to be served. Enjoy this delightful dish with your favorite rice!
