- 1 Tbsp fine red chili powder
- 1/2 Tbsp minced garlic
- 2 Tbsp Cheongju (or Mirin)
- 2 Tbsp fragrant perilla oil
- 1 Tbsp sesame seeds
- 1/2 red chili (seeds removed and finely chopped)
- 1/2 green chili (seeds removed and finely chopped)
- 2 Tbsp chopped green onions (finely chopped)
- 6 Tbsp soy sauce
- 1 Tbsp fine red chili powder
- 1/2 Tbsp minced garlic
- 2 Tbsp Cheongju (or Mirin)
- 2 Tbsp fragrant perilla oil
- 1 Tbsp sesame seeds
- 1/2 red chili (seeds removed and finely chopped)
- 1/2 green chili (seeds removed and finely chopped)
- 2 Tbsp chopped green onions (finely chopped)
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. Removing any dirt or soil from the surface ensures the rice won’t have a raw smell and will have a clean taste.
Step 2
After rinsing, place the bean sprouts in a colander and let them drain naturally. If they are too wet, the rice might become mushy, so just let the excess water drip off.
Step 3
Now, prepare the bowl for making the bean sprout rice. Start by evenly spreading one bowl of warm cooked rice at the bottom of the bowl. Using warm rice helps it meld well with the bean sprouts.
Step 4
Next, arrange the drained bean sprouts nicely on top of the rice. It’s best to use enough bean sprouts to cover the rice completely.
Step 5
Cover the bowl with a lid or plastic wrap, poking 2-3 small holes in the wrap. Place the prepared bean sprout rice in the microwave and cook for about 4 minutes. It’s important to keep the bean sprouts crisp!
Step 6
While the bean sprouts are cooking, let’s make the delicious seasoning sauce! First, add 6 tablespoons of soy sauce to a bowl. Soy sauce forms the base flavor of the sauce.
Step 7
Next, add 1 tablespoon of fine red chili powder for a hint of spiciness. You can adjust the amount of chili powder to your preference.
Step 8
Add 1/2 tablespoon of minced garlic to enhance the aroma. The slight pungency of garlic will make the sauce more flavorful.
Step 9
Pour in 2 tablespoons of Cheongju (or Mirin) to remove any fishy odors and add umami. This step is crucial for neutralizing the raw smell of the bean sprouts.
Step 10
Add 2 tablespoons of fragrant perilla oil for a nutty aroma. The scent of perilla oil pairs wonderfully with bean sprout rice.
Step 11
Add 1 tablespoon of sesame seeds for extra nuttiness. Rubbing them slightly between your palms before adding can enhance their flavor.
Step 12
Finely chop 1/2 red chili (seeds removed) to add color. If you like it spicier, you can leave some of the seeds in.
Step 13
Also, finely chop 1/2 green chili (seeds removed). This step is a must for those who enjoy a spicy kick!
Step 14
Finally, add 2 tablespoons of finely chopped green onions. Mix all the sauce ingredients thoroughly with a spoon. Your delicious seasoning sauce is now ready!
Step 15
Check if the bean sprout rice is cooked in the microwave. It’s important to ensure the bean sprouts are still crisp and not mushy. The rice should also be nicely heated through.
Step 16
Generously ladle the freshly made, flavorful seasoning sauce over the delicious bean sprout rice. The color and aroma of the sauce are sure to whet your appetite.
Step 17
If you like, fry an egg and place it on top of the bean sprout rice. A sunny-side-up egg with a runny yolk, mixed in, is particularly delicious.
Step 18
Now, mix the bean sprout rice, seasoning sauce, and fried egg together in the bowl and enjoy! It’s a simple yet incredibly delicious meal!
