Super Simple Pork Kimchi Stew Recipe
Delicious Pork Kimchi Stew Even with Cheap Pork Shoulder Cut!
Introducing a super easy Kimchi Stew recipe that’s incredibly delicious, even when made with inexpensive pork shoulder cut and well-fermented kimchi. The deep and spicy broth is simply exquisite!
Main Ingredients
- Pork shoulder cut 1.5 ‘geun’ (approx. 900g)
- Well-fermented napa cabbage kimchi 1 whole head (cut into bite-sized pieces)
- Gochugaru (Korean chili powder) 1 Tbsp
- Perilla oil 1 Tbsp
- Ginger wine (or cooking wine) 1 Tbsp

- Fish sauce (anchovy or sand lance) 2 Tbsp (or soup soy sauce)
- Dasida (or MSG-based enhancer) a pinch

Cooking Instructions
Step 1
In a pot for the stew, layer the bite-sized pieces of napa cabbage kimchi. Add the pork shoulder cut on top. Sprinkle with 1 Tbsp of gochugaru and 1 Tbsp of perilla oil. Stir-fry over medium heat until the pork is cooked through and its color changes to white. Stir-frying the kimchi and pork together enhances the savory flavor.
Step 2
Once the pork is partially cooked, add 1 Tbsp of ginger wine (or cooking wine) and continue to stir-fry. Ginger wine helps to remove any gamey odor from the pork and adds a richer flavor.
Step 3
After sufficiently stir-frying the pork and kimchi, pour in enough water to cover them generously. You can also use rice water for a smoother and more savory broth.
Step 4
Once the water starts to boil, add 2 Tbsp of fish sauce for seasoning. (You can substitute with soup soy sauce). Now, cover the pot and simmer on medium-low heat for about 30 minutes. It’s crucial to let the ingredients simmer slowly to allow their flavors to meld into the broth.
Step 5
After simmering for about 30 minutes, taste the stew. If needed, add a tiny pinch of Dasida (or an MSG-based enhancer) to adjust the seasoning. Dasida adds a deep umami flavor, but be careful not to add too much, as it can overpower the original taste.
Step 6
Serve the delicious Pork Kimchi Stew generously in bowls. Enjoy it with a hot bowl of rice!
