  • 10 sausages
  • 2 eggs
  • 2 Tbsp avocado oil
  • 2 bowls cooked rice
  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1 tsp black pepper
  • 10 cm green onion (white parts mainly)
  • Ketchup (for garnish)

Cooking Instructions

Step 1

First, slice the sausages into bite-sized pieces, about 0.5 cm thick rounds. Avoid slicing them too thinly, as they might break apart during cooking. This thickness will help them hold their shape.

Step 2

Finely chop the green onion, focusing on the white parts, into pieces about 0.3 cm in size. The aromatic flavor of the green onion will greatly enhance the taste of your fried rice.

Step 3

Heat a frying pan over medium-low heat and add 2 tablespoons of avocado oil. Add the chopped green onions and stir-fry gently, being careful not to burn them, until fragrant. This step infuses the oil with delicious onion flavor, making the fried rice much tastier.

Step 4

Once the green onions are fragrant, add the sliced sausages and stir-fry them together. It’s important to manage the heat at this stage to prevent the green onions from burning. Cook until the sausages are nicely browned.

Step 5

When the sausages are somewhat cooked, add 2 bowls of warm cooked rice and drizzle 1 tablespoon of oyster sauce evenly over the rice. Use a spatula to break up any clumps of rice and stir-fry until well combined.

Step 6

After mixing the rice and sausages, sprinkle in 1 teaspoon of black pepper for added aroma. Continue to stir-fry for another 1-2 minutes to ensure the flavors are well distributed.

Step 7

Push the fried rice ingredients to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space. Once the soy sauce starts to bubble, mix it with the rice and other ingredients. Stir-frying it this way allows the deep flavor of the soy sauce to permeate the rice, making it even more delicious.

Step 8

Again, push the fried rice to one side. Pour the 2 beaten eggs into the empty space to make scrambled eggs. As the eggs begin to set, stir them with chopsticks until they are cooked but still slightly soft. Scrambled eggs that are not fully cooked will blend more smoothly with the rice.

Step 9

Gently mix the prepared scrambled eggs into the fried rice. Stir lightly so that the eggs are well incorporated among the grains of rice.

Step 10
