Sweet Potato Crisps (Goguma Krungji)
Air Fryer Sweet Potato Crisps (Krungji) Recipe
I made sweet potato crisps (krungji) using less sweet sweet potatoes. With a crispy texture on the outside and a moist interior, the varied textures make them irresistible to snack on.
Ingredients
- 2 steamed sweet potatoes
- 1 Tbsp olive oil
- Allulose or corn syrup (optional)
Cooking Instructions
Step 1
Wash the sweet potatoes thoroughly under running water and steam them with the skin on. Add enough water to cover them and steam until they are completely tender.
Step 2
Once the sweet potatoes are cooked, let them cool slightly. Then, peel them or, if you prefer, leave the skin on and slice them thinly. The thinner you slice them, the crispier they will become.
Step 3
Spread 1 tablespoon of olive oil evenly over a sheet of parchment paper. This step helps prevent the sweet potato slices from sticking and ensures a crispier result.
Step 4
Arrange the thinly sliced sweet potatoes on the oiled parchment paper, leaving some space between them. Cover the slices with another sheet of parchment paper, and then use a rolling pin or the bottom of a glass to press and flatten the sweet potato slices thinly.
Step 5
It’s important to flatten them as thinly as possible, similar to how ‘krungji’ (Korean croissants) are made. The thinner they are, the crispier they will turn out when air-fried.
Step 6
Carefully place the flattened sweet potato slices and the parchment paper into the air fryer basket. If the sweet potatoes don’t seem sweet enough on their own, you can lightly brush the tops with allulose or corn syrup for extra sweetness.
Step 7
Once your air fryer is preheated, cook the sweet potato slices at 180°C (350°F) for 10 minutes as the first stage. This will start to cook them and allow some moisture to evaporate.
Step 8
After 10 minutes, flip the sweet potato slices and cook for another 8-10 minutes, or until they turn a light golden brown and become crispy all over. Keep an eye on them during this second stage, as cooking times can vary depending on your air fryer model. Allow them to cool completely; they will become even crispier as they cool down.

Your delicious sweet potato crisps, with a crispy exterior and moist interior, are now ready!
