  • Carrot (finely minced)
  • Onion (finely minced)
  • Broccoli (finely minced)
  • Bell peppers (yellow and red) (finely minced)

  • 3 tablespoons breadcrumbs

  • Pinch of salt
  • 1 tablespoon Mirin (for removing beef odor)

Cooking Instructions

Step 1

Prepare the fresh ground beef and gently press it with paper towels to remove any excess blood. Using very fresh beef minimizes the need for extensive blood removal. For the vegetables, you can use whatever you have on hand. I’ve used finely minced carrot, onion, broccoli, and yellow/red bell peppers. Mincing the vegetables very finely helps the patties hold their shape and prevents them from falling apart.

Step 2

In a bowl, combine the ground beef, finely minced vegetables, 3 tablespoons of breadcrumbs, and 1 egg. Add a pinch of salt. To effectively eliminate any gamey odor from the beef and enhance its flavor, add 1 tablespoon of Mirin.

Step 3

Knead the mixture thoroughly until all ingredients are well combined. Repeatedly tossing the mixture against the side of the bowl helps to remove air pockets within the meat, making the patties firmer and giving them a tender texture. For an even better result, refrigerate the mixture for 30 minutes to 1 hour to let it rest and meld. This resting period allows the flavors to develop and the ingredients to bind together beautifully.

Step 4

Shape the mixture into small, flat round patties, suitable for a single serving for a baby. If you plan to freeze them for later use, line a tray or container with parchment paper. Place the patties on the parchment paper, and then wrap each individual patty with parchment paper before storing. This method prevents them from sticking together and keeps them neatly organized. Freezing them in portions like this makes them incredibly convenient to use anytime.

Step 5

Heat a lightly oiled pan over medium-low heat. Carefully place the shaped beef patties into the warm pan. Cook them, flipping once, until they are golden brown on both sides. It’s crucial to control the heat and cook them slowly to ensure they are thoroughly cooked through without burning. Be mindful not to let the patties scorch while ensuring they cook evenly. This will result in moist and tender beef patties.
