  • 1 can (135g) Chicken Breast
  • 3 small Potatoes
  • 2 large Onions
  • 1 small Carrot
  • 1/2 head Broccoli
  • 1 Apple

Cooking Instructions

Step 1

Drain the water from the canned chicken breast and set aside. This helps prevent the curry from becoming too watery.

Step 2

Since the apple will be used with the skin on, thorough washing is essential. Gently rub the apple with baking soda to remove pesticide residues, or soak it in a baking soda solution before rinsing. Rinse again with clean water 2-3 times and drain.

Step 3

Dice the prepared onion, potatoes, carrot, and apple into approximately 1.5cm cubes. Separate the broccoli into bite-sized florets. Cutting the ingredients to a similar size helps them cook evenly.

Step 4

Heat a deep pot over medium heat and add a generous amount of canola oil. First, sauté the diced onions, stirring occasionally to prevent burning, until they become nicely browned and sweet. This caramelization is key to a delicious curry! Once the onions are golden, add the potatoes and carrots and sauté briefly. Then, pour in 800ml of water.

Step 5

Cover the pot and simmer over medium-low heat until the vegetables are completely tender and cooked through. This should take about 10-15 minutes. Stir occasionally to prevent the vegetables from sticking to the bottom.

Step 6

Once the vegetables are tender, add the drained chicken breast and gently mix it in.

Step 7

Dissolving the curry powder in water beforehand is crucial to prevent lumps and achieve a smooth consistency. Measure out 8 tablespoons of curry powder and mix it with 200ml of cold water (about 1 cup) using a whisk or spoon until completely smooth and lump-free.

Step 8

Add the prepared apple and the dissolved curry mixture to the pot. Once the curry begins to thicken, add the broccoli florets and cook for just 1-2 more minutes. Avoid overcooking the broccoli, as it can become mushy and lose its vibrant color. Season with salt to taste for a delicious chicken breast curry!
