Main Ingredients
  • Bulgogi-cut Beef 500g
  • 1 Onion
  • 1/4 Carrot
  • 1 King Oyster Mushroom
  • 1 Green Onion

Marinade & Seasoning
  • 4.5 Tbsp Soy Sauce
  • 1 Tbsp Plum Extract (Maesil Cheong)
  • 1/3 Tbsp Ginger Extract (or a little minced ginger)
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Minced Green Onion
  • 1/3 Tbsp Sesame Oil
  • 1 Tbsp Cooking Wine (Cheongju or Mirin)

Cooking Instructions

Step 1

First, prepare 500g of thinly sliced beef, suitable for bulgogi. Gently pat the surface of the beef with paper towels to remove any excess blood. Removing the blood helps eliminate gamey odors and enhances the beef’s flavor.

Step 2

To the patted-dry beef, add all the marinade ingredients (4.5 Tbsp soy sauce, 1 Tbsp plum extract, 1/3 Tbsp ginger extract, 1/2 Tbsp minced garlic, 1 Tbsp minced green onion, 1/3 Tbsp sesame oil, 1 Tbsp cooking wine). Gently massage the ingredients into the beef to marinate. Mix well to ensure the seasoning is evenly distributed.

Step 3

Cover the marinated beef with plastic wrap and refrigerate for at least 1 hour. This resting period allows the flavors to penetrate the meat deeply, resulting in a richer taste.

Step 4

Heat a pan over medium heat and add the marinated beef. Cook, stirring, until the surface of the meat begins to cook and change color. Be careful not to cook over high heat, as this can make the beef tough.

Step 5

Once the beef has changed color, add the thinly julienned carrot and onion. Continue to stir-fry until the onions become translucent and the carrots are slightly tender.

Step 6

Add the sliced king oyster mushrooms and continue to stir-fry until all ingredients are well combined. Cook until the mushrooms soften.

Step 7

Finally, add the diagonally sliced green onions and stir-fry for another minute or so until fragrant. Turn off the heat to finish. The dish is ready when all ingredients are cooked through and the sauce has coated the beef beautifully.

Step 8

This delicious bulgogi beef is wonderful as a side dish on its own. However, it’s even more spectacular served over a bed of warm rice as a bulgogi beef rice bowl. For an extra touch, you can add a fried egg or some shredded seaweed on top.
