Cooking Instructions
Step 1
First, rinse the peeled quail eggs thoroughly under running water to remove any impurities. Prepare 15 whole garlic cloves by peeling them. If you like a little heat, slice about 4 red or green chilies into large pieces to add to the braise. The mild spice from the chilies will enhance the overall flavor.
Step 2
Place all the prepared quail eggs in a wide, deep pot or pan. Pour in 200ml of water, ensuring the eggs are well covered and moist.

Now, let’s make the delicious braising sauce. Add about 80ml of savory soy sauce. Be aware that the saltiness can vary between brands of savory soy sauce, so it’s best to use slightly less than you would with regular soy sauce initially. You can always add more later if needed.

Add 5 tablespoons of sugar for sweetness and 1 tablespoon of cooking sake (mirin) for flavor and to help remove any eggy smell, adding a nice sheen to the eggs.
