  • 1 can (200g) Tuna, drained
  • 1/4 Green Onion
  • 1/4 Onion
  • 1/6 Zucchini
  • 1/6 Carrot
  • 1 Shiitake Mushroom
  • 2 Eggs
  • 3 Tbsp Pancake Mix

Cooking Instructions

Step 1

First, to ensure the pancakes hold their shape well while cooking, wash and thoroughly dry all the vegetable ingredients (green onion, onion, zucchini, carrot, shiitake mushroom). Then, finely mince them. Chopping them finely will help the ingredients bind together better and make shaping easier.

Step 2

Open the can of tuna and drain out all the oil completely using a sieve. If any oil remains, it can impart a strong oily flavor to the pancakes or prevent them from shaping nicely.

In a large bowl, combine the drained tuna, the finely minced vegetables, 2 fresh eggs, and 3 tablespoons of pancake mix. For added flavor, you can season with a pinch of salt and pepper to your liking. Mix everything thoroughly with a spatula or spoon, kneading slightly, until a cohesive batter forms.

Heat a frying pan over medium-low heat and generously coat the surface with cooking oil. Scoop spoonfuls of the batter and drop them onto the hot pan, leaving ample space between each pancake to prevent them from sticking together.

Use the back of a spoon to gently shape each portion of batter into a round, flat pancake. Let it cook for about 2-3 minutes until the bottom turns golden brown. Then, carefully flip each pancake using a spatula. Once flipped, gently press down on the pancakes with the spatula to ensure they cook evenly throughout. This technique helps cook the inside thoroughly, resulting in a delicious pancake.

Step 6

Continue to cook until both sides are beautifully golden brown and crispy. Once cooked, transfer the pancakes to a plate lined with paper towels to absorb any excess oil.
