Main Ingredients
  • 1 handful Glass noodles (approx. 80-100g)
  • 1 handful Bean sprouts (approx. 80-100g)
  • 1 handful Chives (approx. 80-100g)

Seasoning
  • 3 Tbsp Soy sauce
  • 3 Tbsp Sesame oil
  • 1 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 1 Tbsp Water

Cooking Instructions

Step 1

Soak one handful of glass noodles in lukewarm water for about 1 hour until fully softened. This will ensure the noodles are chewy yet tender and absorb the sauce well.

Step 2

Drain the soaked glass noodles thoroughly using a sieve.

Step 3

Rinse one handful of bean sprouts under running water and drain them. It’s important to wash them thoroughly to remove any unpleasant smell.

Step 4

Wash one handful of chives cleanly.

Step 5

Cut the washed chives into bite-sized pieces, about 4-5 cm long. If they are too long, it can be difficult to mix the japchae.

Step 6

Place the cut chives in a bowl for now.

Step 7

Prepare a wide pan and add 3 tablespoons of soy sauce.

Step 8

Add 1 tablespoon of water to slightly dilute the saltiness of the soy sauce.

Step 9

Add 3 tablespoons of sesame oil for a rich, nutty flavor.

Step 10

Add 1 tablespoon of minced garlic to enhance the aromatic profile of the japchae.

Step 11

Add 1 tablespoon of sugar for a touch of sweetness.

Step 12

Mix all the seasoning ingredients in the pan with a spatula to create the sauce.

Step 13

Heat the prepared sauce over medium heat. Once it begins to boil,

Step 14

Add the drained glass noodles and stir quickly to coat them evenly with the sauce. Keep stirring to prevent the noodles from clumping.

Step 15

Once the glass noodles are somewhat cooked, add the washed bean sprouts and stir-fry them together. Avoid overcooking to maintain the crispness of the bean sprouts.

Step 16

When the bean sprouts are slightly wilted but still crisp,

Step 17

Add the prepared chives and stir-fry quickly. Chives cook very fast, so stir-frying over high heat for a short time is best.

Step 18

When the chives turn a vibrant green and are slightly wilted, turn off the heat.

Step 19

Finally, sprinkle with sesame seeds for a beautiful finish. Your delicious Chive and Bean Sprout Japchae is ready!
