Here’s an incredibly simple fish cake udon recipe that even my son, a picky eater, can make! If you’re hesitant about making udon broth from scratch, try this method. It’s quick, easy, and delicious.
Ingredients (Serves 2)
- 1 pack of assorted fish cakes for soup (includes seasoning sachet)
- 2 servings of Sanuki udon noodles
- 2 Tbsp soy sauce for soup (guk-ganjang)
- 6 pieces of tteokbokki rice cakes (optional)
Cooking Instructions
Step 1
First, prepare the assorted fish cakes intended for soup. These packs usually come with a seasoning sachet, which will be the base for our flavorful broth.

Next, let’s get the udon noodles ready. We highly recommend using Sanuki udon noodles, especially the frozen, hand-pulled style ones. They have a wonderfully chewy texture that makes this dish truly special! You’ll love them.
Step 3
Now, pour a generous amount of water into a pot. Cut the fish cakes into bite-sized pieces (about 1-inch squares) and add them to the pot along with the included seasoning sachet. Start boiling the broth. Since we’ll be cooking the udon noodles in the same pot, make sure there’s plenty of water. Once the broth begins to boil and the flavors meld, taste it. If needed, add the soy sauce for soup (guk-ganjang) to enhance the savory taste.
Step 4
As soon as the fish cake broth starts to simmer vigorously, add the frozen Sanuki udon noodles. Cook them together with the broth until the noodles are tender and chewy. Gently stir occasionally to prevent them from sticking together.
Step 5
Finally, for an extra treat, you can add some tteokbokki rice cakes if you like. They add a delightful chewiness and make the udon even more satisfying. Cook for a few more minutes until the rice cakes are soft. Enjoy your delicious homemade udon!
