Ingredients for Soybean Sprout Salad
  • 229g Jyunyi bean sprouts
  • Pinch of coarse salt (for blanching)
  • Small amount of green onion (finely chopped)
  • 2 cloves garlic (minced)
  • 0.8 tsp bamboo salt (or regular salt, adjust to taste)
  • 1 tsp toasted sesame seeds
  • 3 tsp red pepper flakes
  • 1 tsp sesame oil

Cooking Instructions

Step 1

First, prepare the Jyunyi bean sprouts. It’s important to check that the sprouts are fresh and have no bruised or damaged parts.

Step 2

Rinse the Jyunyi bean sprouts thoroughly under running water to remove any debris. Be careful not to break off the root or tip of the sprouts while washing. Finely chop the green onion and mince the garlic.

Step 3

Fill a pot with plenty of water and bring it to a boil. Once the water is rapidly boiling, add a pinch of coarse salt and the rinsed bean sprouts. The key is to not overcook them, ensuring they remain crisp and crunchy.

Step 4

Once the bean sprouts are cooked to your liking, immediately drain them in a colander or sieve to remove excess water. Letting them cool slightly in the colander will help preserve their crisp texture. While the sprouts are cooling, finely chop the green onion and mince the garlic, if you haven’t already.

Step 5

To the drained bean sprouts, add the minced garlic, chopped green onion, toasted sesame seeds, sesame oil, red pepper flakes, and bamboo salt (or regular salt). Bamboo salt can enhance the flavor and draw out moisture from the sprouts due to its mineral content, but regular salt works perfectly fine too. Adjust the seasoning to your preference.

Step 6

Gently mix and toss everything together until the seasonings are evenly distributed among the bean sprouts. Be careful not to mash the sprouts; toss them lightly to combine. Once the seasonings are well incorporated, your delicious soybean sprout salad is ready.

Step 7

Transfer the finished soybean sprout salad to a serving dish. It can be enjoyed immediately or chilled in the refrigerator for a refreshing taste.
