When the weather heats up, my appetite tends to wane. I find myself constantly craving simple noodle dishes. Today, I’m sharing a quick and easy Bibim Naengmyeon that’s perfect for those days when you need a refreshing meal. It’s incredibly satisfying with its perfectly balanced spicy, sweet, and tangy sauce!

Main Ingredients
  • 2 servings of cold naengmyeon noodles
  • 1/4 cucumber
  • 1/3 cup well-fermented yeolmu kimchi (radish greens kimchi)
  • 1 hard-boiled egg

Spicy & Sweet Bibim Sauce
  • 3 Tbsp gochujang (Korean chili paste)
  • 1/2 Tbsp fine gochugaru (Korean chili flakes)
  • 1 Tbsp maesilcheong (green plum syrup)
  • 1/2 Tbsp minced garlic
  • 1/3 Tbsp sugar
  • 1/2 Tbsp vinegar

Cooking Instructions

Step 1

First, carefully separate the frozen naengmyeon noodles, loosening them strand by strand so they don’t stick together. This ensures the sauce will coat them evenly.

Step 2

Wash the cucumber and julienne it into thin strips. Hard-boil the egg, peel it, and set it aside. You can also cut the egg in half for serving if you prefer.

Step 3

Bring a pot of water to a rolling boil. Add the loosened naengmyeon noodles and cook for about 1 minute, stirring gently to prevent sticking. Be careful not to overcook, as the noodles can become mushy! Immediately after cooking, drain the noodles and rinse them thoroughly under cold running water, ideally in an ice bath, to firm them up and make them delightfully chewy.

Step 4

Drain the noodles well after rinsing them under cold water. Rinsing removes excess starch, resulting in a cleaner taste and a more al dente texture. Place the drained noodles into a serving bowl. Arrange the julienned cucumber, chopped yeolmu kimchi, and the halved hard-boiled egg on top of the noodles. Finally, generously spoon the prepared spicy and sweet bibim sauce over everything. Sprinkle liberally with freshly ground sesame seeds. Mix everything together well with chopsticks to combine the noodles, sauce, and toppings. Enjoy your refreshing and flavorful Bibim Naengmyeon!
